With the weather dropping and little peaks of snow what’s better than a hearty tomatoe sauce and flavorful meatballs.
Lucky for me I woke up and seen my car covered with snow and temps in the low 30’s I also felt a cold coming along so I had to think quick what can I make for dinner that’ll be easy and tasty. I came up with lasagna and meatballs with a twist this should last me two days while I’m on bed rest trying to tackle this cold.
This meal should be able to get done with your everyday pantry items and it’s easy so have fun and enjoy.
The ingredients needed for meatballs are
- 1 lb ground beef or turkey
- 1 jar of pasta sauce
- 1 16 oz can of diced tomatoes
- 1 Tsp garlic powder
- 1 Tsp onion powder
- 1 Tsp parsley
- 1 Tbs black pepper and salt
- 1 Tsp red pepper flakes
- 1 Tsp oregano
- 3/4 bread crumbs
- 1/4 grated Parmesan cheese
- 1/3 shredded mozzarella

The ingredients needed for the lasagna rolls are
- Half box lasagna noodles (follow cook instructions on box)
- 1 cup ricotta cheese
- 1 cup cooked spinach
- 1 cup tomatoe sauce mixed with diced tomatoes
- 1 tbs fresh parsley
- 1 egg
- Half a cup Parmesan cheese & cheddar cheese
In a deep bowl mix all meatball ingredients together starting with dry then wet ingredients with your hands get everything incorporated lucky for me my daughter was my sous chef for this meal


After all meatball ingredients are mixed wash hands and put some olive oil in your hands to help form the meatballs. Set oven to 375 degrees and prepare dish with oil to set your meatballs .
While meatballs are in the oven get pot ready to boil water for lasagna noodles in salted water

Bake meatballs 15-20 min till they are browned on the outside but not completely cooked 
Look at that fresh Parmesan just oozing out 🙂
For the next 20 min of cooking I transferred meatballs to a different dish because my cast iron pan was cooking them to fast. In a separate dish I placed half a jar of tomatoe sauce and placed the meatballs on top 
Next top the meatballs with your mozzarella cheese.
In a pan sautée spinach for lasagna rolls. Heat pan with olive oil and a tsp minced garlic 
Cook spinach and cool till ready to wrap in lasagna rolls
After lasagna noodles have cooked cool enough to be able to wrap. In a deprecate boil mix ricotta cheese, egg, spinach, fresh parsley,Parmesan cheese salt and pepper 
Next step is to start the assembly of the lasagna rolls. Add filling and top with a spoon of tomatoe sauce.
In a prepared baking dish fill bottom with remaining tomatoe sauce and add lasagna rolls 
Top with a spoon of tomatoe sauce and sprinkle cheddar cheese on top

In the oven bake covered for 25-30 min .
Take meatballs out of oven and they should look like this nice and cheesy
After lasagna rolls are done get ready to enjoy
