Roast corn 

I was in the mood for some roast corn and thoughts of my childhood days in Trinidad (where my family originates) came back into my memory. 

Roast corn is usually sold on the street or a pop up stand costing about 2-3 dollars a piece. It’s yummy great snack and cheap. Just remember to have toothpicks near by lol. 

I made roast corn with a little twist super fast recipe that took about 35 min to complete. The ingredients are

  1. Fresh corn 2-4 ears 
  2. Half a stick of unsalted butter
  3. 1 tsp fresh garlic 
  4. Half tsp black pepper 
  5. Half tsp adobo
  6. Dash of crushed red pepper
  7. Tsp fresh parsley 

Set oven to 375 and let the roasting begin. After corn husks have been removed rinse and pat dry your corn. With the stovetop on medium high heat just place the corn over the fire 


It’ll start popping and crackling but don’t be alarmed this is what you want to hear. Keep a close eye on the corn turning 2-3 min intervals on each side so that the corn can get that dark color


In a microwave safe bowl add the butter and seasoning and melt about 35 seconds 


After corn is done roasting I cut it into smaller pieces or you can leave it whole. Place corn in oven safe dish lined with foil and pour the butter mixture on top. Allow the corn to fish cooking in the oven for 20-25 min and that’s it ! Super easy simple and yummy ENJOY
