I am all for quick meals packed with a ton of flavor. Chicken is definitely an important factor in my weekly meals. It can be fried, stewed, jerked, roasted, baked YOU NAME IT!
So today I decided to share with you guys my spin on Stew Chicken. The great thing about this meal is that you can use any pieces of chicken whether itbe wings, party wings, chicken breast or thighs. For my dish I used wings (separated).
The ingredients needfor this recipe are
- 1 lbc chicken wings
- 1 tbs dark brown sugar
- 1 tbs oil
- 1 tbs adobo
- half a tsp black pepper
- 1 tbs green seasoning
- qt cup red & green peppers
- 1 tomato finely diced
- qt cup onion finely diced

In a ziplock bag or bowl toss chicken with ingredients starting from #4-#6. Overnight is preferred but if you are not able to do this 30 min to an hour will work fine.
When you are ready to prepare chicken heat a Dutch oven pot with oil and add dark brown sugar stir constantly at a fairly low temp. What you are tryna to achieve is a dark brown syrup consistency almost looking like molasses and you want to brown your chicken on both sides with this mixture. After chicken is browned on both sides add veggies and a cup or less water (use your judgement) either way if you feel like you’ve added too much water just cover pot and allow to cook a little longer.
Cover chicken and low temp down and allow it to simmer for about 30 minand your done!
Add a little parsley for decoration

This recipe can be paired with white rice or rice and peas or even with bread
Tip* You can purchase the “browning” sauce from your local supermarket Grace makes a good bottle.
