I am an ultimate seafood and fish lover. What else do I love spicy anything lol I can’t help myself sometimes.
I decided to make some fried red snapper (Jamaican style) topped with a “escovitch sauce” which is a rendered recipe of vinegar, sugar, Scotch bonnet pepper, onions & sweet peppers. The recipe is fantastic and can go with not only seafood but poultry as well .
To make this escovitch fish you will need
- 3-4 red snappers cleaned tail cut off head on if preferred
- 2 cups flour or fish fry
- One scotch bonnet pepper
- Half a white onion
- 2 halves from a red pepper and a yellow pepper
- 1 cup vinegar
- Two tbs sugar
- Half a tsp pimentos
- Adobo seasoning to taste
- One tsp garlic powder & onion powder
- 1-2 limes or lemons
Begin by cleaning your fish and rinsing it off a couple times with lime or lemons to rid the fishy smell. After it’s clean pat it dry and begin to season it with the adobo, onion and garlic powder feel free to add some black pepper as well. Then get the fish covered in flour
Next heat up your oil to fry the fish I used my deep fryer if you don’t have one a deep bottom bottom will work fine. Sprinkle a little flour in oil to rest to see if it’s hot enough if the flour bubbles it’s ready if not give it a few more minutes.
While your fish is frying start assembling your (escovitch sauce) so in a small sauce pan add vinegar,sugar and pimento berries then slice up the peppers and onions and let them come to a boil then a low simmer .
Remove your fish from hot oil when it’s cooked and allow the oil to drain on paper towel or a rack.
After all the fish are cooked time to assemble and eat!!!
Place fish on plate or platter sprinkle with a little salt then add the escovitch sauce on top drizzle a little of the vinegar as well and your ready to eat.
This dish pairs well with dumplings boiled or fried, brown rice, quinoa or traditional rice & peas which ever your prefer or desire. Hope you guys enjoyed this recipe try it and love it .
