My Oxtail recipe

Almost everyone I know loves oxtails. Me personally I didnt start liking them until I taught myself to make them and one thing I can say is that my recipe SLAPS! So keep scrolling to get my recipe and I hope you enjoy it.

The main thing you need is heavy bottom pot that can handle heat and comes with a lid. This is the pot that I use when making oxtails

The ingredients that you need for this recipe are:

  • Oxtails (fat trimmed)
  • wet oxtail marinade (pictured above)
  • half a onion
  • 2 scallions
  • 1 tomato
  • Can of butter beans
  • Olive oil
  • 1 box of beef stock
  • couple sprigs of thyme
  • salt and pepper
  • tsp onion & garlic powder
  • tsp of browning

Of course my preferred method to cook these oxtails would be to season overnight but if your unable to I’m pretty sure it’ll still come out good. I clean my oxtails with fresh limes, water and vinegar than pat dry. To the oxtails I add the wet marinade (enough to cover all the oxtails) I also add the onion powder, garlic powder, dry oxtail seasoning ( don’t use a lot of the dry spice because it can cause your dish to be very spicy)

After all these seasonings are added massage and rub it all together, cover and place in fridge.

COOKING DAY

I would say dedicate about 4 hours for this meal no need to rush greatness 🙂

In that big silver pot you have medium heat when hot add olive oil enough to cover bottom of pot.

Add oxtails to pot to brown both sides don’t over crowd pot.

Working in portions brown all of your oxtails then add them all back to the pot add the entire box of beef stock and finish it off with enough water to cover the oxtails.

Chop up your tomato, scallions and onion add it to the pot along with the thyme 3, 4 sprigs is fine.

Then add about a tsp of browning ( I like my oxtails to have that rich dark color) to the pot stir and cover.

Allow oxtails to cook for one hour and 15 min stirring half way thru.

At this point I add about 3 cups of water some more seasoning and salt and pepper stir and allow them to continue cooking low and slow for about 2 more hours or until tender.

When you have about 30 min left cooking add 1 to 2 cans of butter beans to your oxtails stir and cover. If your gravy has not thickened which it should make a slurry (which consists of water and flour to thicken your gravy). And your done check for tenderness of your oxtails with a fork and if done your good to go serve with. rice & peas, white rice , plantains or cabbage.
