Roasted Fingerling Potatoes

Who doesn’t love potatoes? I think just about everyone does whether it’s fried, baked, boiled, or roasted. Well guess what? I love all and any type of potatoes lol they go with just about anything and are usually pretty quick to cook.

Today i decided to roast some fingerling potatoes with a homemade spice blend DELICIOUS of course I’d love to share the recipe with you guys so here it goes 

The ingredients needed for this recipe are

  1. 2 lb fingerling potatoes (halved)
  2. 1/4 cup olive oil 
  3. Zest and juice from half a lemon
  4. 1 tbs fresh parsley 

For the spice blend you will need 

  1. 3 tbs black peppercorns
  2. 2 tbs kosher salt 
  3. 2 tbs ground mustard
  4. 1 tbs coriander seeds 
  5. 2 tsp garlic powder
  6. 1/2 tsp red pepper flakes
  7. 1 tbs paprika 

To make my spice blend I used a spice grinder but if you have a mortar and pestle you can use that as well

Mixed the spices up till everything was incorporated and seeds fine. 🙂

While the spice is being blended preheat oven to 425 degrees. Half way through the eating up place oven safe dish in the oven to heat up. After cleaning and cutting potatoes in half lengthwise place in bowl and add one tbs of the spice mixture plus olive oil and mix.

After oven is preheated remove dish be careful very hot and place potatoes on it, listen to that sizzle ​

Roast in the oven for 25 min until golden brown. Remove from oven and move potatoes back to mixing bowl and add lemon zest + juice of half lemon and add parsley 


 

Mix potatoes up and add them back to baking dish top with more fresh parsley
