Fun fact about me I used to hate beef it was hard for me to consume and I disliked everything about it. Until I went to a fairly expensive steakhouse for the first time “Peter Lugers” where I was able to pick my cut of meat and have it cooked to my desire. One of the best meals I ever ate came from there.
Now I’ve come a long way from eating there, by now I’ve ate at over 20 different steak houses and each have their own special touch. Now I know what cuts of meat I’m interested in and how I want it cooked. I can basically cook any cut of meat right at home and feel like I’m at a 5 star steak house. So today I want to show you all how I make filet mignon right on my stove top.
The most important item you need for this meal is a CAST IRON POT
They come in different sizes and shapes you can sometimes find them at your local supermarket or for sure you can find them at Target. This pot gives your steak a nice crust and is oven safe for finishing touches as well.
The ingredients needed for this recipe are
- 4 petite filet mignons
- Half a stick unsalted butter
- Fresh black pepper 1/2 tsp
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp parsley
- Rosemary sprig
- Thyme sprigs 3
- Tbs Szeged steak seasoning

Place a tsp olive oil on steaks and sprinkle black pepper on both sides.
Then melt butter with all ingredients expect for steak seasoning
Next you can pour butter mixture over all the steaks and with hands gently get them all covered

While the steaks marinate in the butter mixture heat your cast iron pan medium high heat with the pan coated with olive oil. In the mean time you can now season the steaks with the steak seasoning pressing down.
After about 4 min your pan should be hot enough gently add steaks to pan and you should hear it sizzle
For medium well cook steak on both sides 5-6 min each then let it rest and for well done about 7-8 min each side

After I turned to other side I deglazed the pan with a little red wine about a qt cup but this is optional.
*Tip Never cut into steak until it is well rested or all the wonderful juices will drip out. Allow your meat to rest at least 4 min before cutting.
And that’s about it feel free to pair your steak with roasted potatoes , mashed potatoes, creamed spinach or what ever your pallete desires. ENJOY!
